RECIPE PREPARATION Endive salad:

Remove the end of the endives and cut into slices (as in cabbage salad). Marinate for 20 minutes in the juice of a lemon. Meanwhile, cut the chicken breast into cubes. Mix with endives, mayonnaise and spices. And voila! Bon appetit !!!

We will boil chicken breast with carrot and a little salt.

Chicory they will be washed under cold water (they will not be left in the water because they will become bitter), then they are put in a sieve to drain.

Chicken breast and carrot boiled we will put it to cool in a bol.

These will be cut in small strips (chicken breast) and thin washers (boiled carrot).

Bell pepper washed and cleaned of seeds will be cut into thin strips.

Chicory break small pieces by hand (do not cut with a knife, because they will become bitter).

Everything prepared in this way will be put in a large bowl.

In the the moment when endive salad with chicken breast it will serve, then we put a PLATEAU (decorated with lettuce), sprinkling with dressing prepared.

Endive salad with cheese and nuts

Prepare the dressing by mixing olive oil, vinegar, salt and pepper and set aside. Meanwhile, cut the end of the endives with a knife and unfold the leaves, one by one.

Wash and pat dry with a clean towel. Place it circularly in a bowl or on a plate.

Cut the pear into cubes and mix with the crushed cheese and walnuts (if they are too big, they are also crushed) and with the previously prepared dressing.

Three endive salads

Yeah Al that sounds pretty crap to me, Looks like BT aint for me either. I really like salads I've been passionate about salads for a while (the truth is that I've always liked them and I've tried many recipes, but not as many as cake ones), and now I've discovered endives and started making them in various ways .

About endives only good, after a little research work I discovered that it is a vegetable that appears on the market in the cold season, from November to spring so now is the time to buy it and prepare it.

Endives have a high content of vitamins (A, C and those of the B complex) but also of mineral salts (contain iron, manganese, potassium, phosphorus). It is especially important the high content of potassium, necessary for the functional balance of the body. The active principles contained in this vegetable prevent the modification of carbohydrate and lipid metabolism. Endives help regulate the tone of the gallbladder muscles, due to the remarkable choleretic effect. The high water content (90%) makes an active contribution to the functioning of the renal system.

Recent research has also confirmed some cytostatic properties of endives. They prevent the cells from multiplying - which makes them useful in the treatment of cancer as an adjuvant. Not for nothing are they called "white gold".

They were discovered by chance in Belgium but are currently grown mostly in France.

Do not forget that heat-treated, boiled, baked, hardened or fried endives lose absolutely all their properties. I no longer bring in my body any intake of vitamins, minerals, antioxidants. We consume them only for taste and not for their benefits, so try to leave them raw, in salads.

So we are preparing for the onset of the cold winter but with many holidays consuming endives.

As Selgros is the paradise of greens, you can even find what you don't know J, it was easy for me to buy everything I needed to put the recipes into practice. I noticed that absolutely all the greens were very fresh and were packed in both larger and smaller quantities. I bought a 500 gram bag enough for three salads.

Let's see the recipes and then maybe you'll write me what you thought. All ingredients are for one serving.

Salad with endive, arugula and radish

A light and energizing salad.

  • 2 endive
  • 1 sour red apple
  • 30g arugula
  • 1 red radish
  • 2 teaspoons lemon juice
  • 3 teaspoons olive oil
  • 1 teaspoon of vinegar

Mix lemon juice with olive oil and vinegar. The endives are cut in half lengthwise, the spine is removed (he is to blame for the bitter taste) and then the thin strips are cut. Wash the apple and radish well and cut them into thin slices. If you use a vegetable slicer it will be very easy for you.

Put the vegetables in a bowl, add the dressing and mix gently.

Endive salad, red cabbage and walnuts

A seasonal salad that strengthens your immunity.

  • 1 endive
  • ¼ red cabbage (about 300g)
  • 1 suitable carrot
  • 6-7 walnuts
  • 2 teaspoons lemon juice
  • 4 teaspoons olive oil
  • 2 teaspoons balsamic vinegar

We cut the cabbage into thin strips, as well as the carrots. Mix lemon juice with olive oil and vinegar. Pour the sauce over the vegetables and mix gently.

We cut the endive into slices and place them next to each other on a plate. Put the cabbage and carrot mixture over them and sprinkle the walnut kernels on top.

Endive salad, turkey breast and pepper

A hearty salad that can take the place of lunch or dinner

  • 2 slices of turkey breast (about 250g)
  • 2 endive
  • ¼ of red pepper
  • ¼ of green pepper
  • ¼ of yellow pepper
  • 1 small onion
  • 20g parmesan or cheddar cheese
  • salt, white pepper
  • 2 teaspoons mustard
  • 4 teaspoons olive oil
  • 1 teaspoon balsamic vinegar
  • 2 teaspoons lemon juice
  • optional 1 teaspoon herbs from Provence

Beat the turkey breast a little with the schnitzel hammer, season it with salt, pepper and grill it for a few minutes on both sides. We take it out on a plate.

Prepare the sauce, mix the mustard with the olive oil, lemon juice and vinegar. Season with salt and pepper.

Cut the endives in half lengthwise then remove the spine and cut into strips, as well as peppers and onions. We cut the chicken breast into larger pieces.

Mix all the ingredients and add the sauce.

Serve with grated Parmesan cheese on top.

ENDIVE SALAD WITH NOBLE CHEESE AND WALNUTS

Endive salad with cheese with mold and nuts is the appetizer of a special refinement that I recommend to everyone when they want something special for the guests and not only.

ingredients:

  • 1 andiva
  • 1 tangerine
  • 1 para
  • 50 gr. NUTS
  • 40 gr. moldy cheese
  • 1 tablespoon lemon juice

This delicate appetizer must be prepared a few minutes before serving, especially since it is very easy and you only need a few ingredients.

I peel the tangerine with a very sharp knife and separate each slice of white skin from the inside.

Clean it looks very well baked and juicy peel, then remove the back and the wood from the tail, slice it and sprinkle it immediately with lemon juice that will prevent oxidation.

I remove the spine from the endive which is quite bitter and carefully separate the fine sheets that I arrange in a circle on the prepared plate.

I alternately place a slice of pear and tangerine in them, sprinkle the small pieces of cheese with mold and then add the prepared walnuts from place to place.

To complete my quick snack today, I sprinkle the endives filled with a drop of lemon and tangerine juice that successfully completes the freshness of the fruit inside.

Endive salad

Endive salad is a very healthy food, but due to the fact that endives are slightly bitter, not all people will find it tasty.

This is usually made with sweet fruit, probably to mask the slightly bitter taste of endives, but we tried something more classic. We will try to make endive salads that also contain fruit, but these will be presented separately in other articles.

From the table below you can see that the main source of calories in endive salad is fat (as in most salads), but of the 14 grams of fat per serving 9-10 come from olive oil, an oil considered very healthy if consumed in moderation. If you want to reduce your caloric intake, you can give up olive oil or telemea (if you have other good sources of calcium and protein).

In general, a healthy person who has a balanced diet has no reason to eliminate the two ingredients mentioned above.
